braise: (고기, 채소를) 푹 삶다, 조리다

           + braised short ribs: 갈비찜

           + braised chicken: 찜닭

salivate: 침[군침]을 흘리다

bring in: (돈을) 벌다

moneywise: 돈에 관해서는, 금전적으로

regulation: 규정, 규제, 통제, 단속/ 규정된

add up: 합산하다/ 말이 되다, 앞뒤가 맞다, (조금씩) 늘어나다

comply: (법, 명령 등에) 따르다, 준수하다

take into: ~의 관계[상태]가 되게 하다(bring into)/ ~로 가져가다

profitable: 수익성이 있는 [있을 것 같은], 이득이 되는, 유익한

expletive: 욕설

squint: 눈을 가늘게 뜨고 [찡그리고]보다/ 사시, 사팔뜨기

ultrareligious: extremely religious

skittish: 겁이 많은, 잘 놀라는, 변덕스러운

loyal regular: loyal customer 고정 고객, 단골손님

 

Lester was inspired by the food his mom used to cook for him in Trinidad.

Lester는 그의 엄마가  Trinidad에서 그를 위해 요리할 때 사용했던 음식에 영감을 받았다. 

I'm having trouble talking because I'm salivating right now.

지금 군침이 돌아서 말하기 힘들어. 

And then coronavirus hit. 그러고 나서 코로나바이러스가 덮쳤어. 

But the money just was not the same. 하지만 그 돈은 똑같지가 않았어. 

He was bringing in less than half of what he used to.

그는 예전의 절반도 안 되는 돈을 벌고 있었어. 

Lester was able to cut some costs.

Lester는 약간의 비용을 줄일 수 있었어. 

But a lot of the bills just kept coming.

하지만 그 많은 청구서들은 그냥 계속 나왔어. 

Lester had to lay off all but two of those employees and go all takeout.

Lester는 그 직원들 두 명을 제외하고는 모두 해고하고 테이크아웃을 해야 했다. 

The takeout business went well. 테이크아웃 사업은 잘 되었어. 

He was bringing in less than half of what he used to.

그는 예전보다 절반도 안 되는 돈을 벌고 있었어. 

Lester was able to cut some costs.

Lester는 약간의 비용을 줄일 수 있었어. 

He deferred rent payments and some loan payments.

그는 임대료 지불과 대출금 지불을 연기했다. 

Restaurants operate on really thin margins as it is.

식당들은 정말 적은 수익으로 운영되고 있어.

For most restaurants, the last four months have been devastating.

대부분의 식당에서는 지난 4개월 동안 엄청난 피해를 입었다.

Margins are really thin for restaurants. 식당에서는 이윤이 정말 적다. 

We're having beautiful weather up here. 여기 날씨는 정말 좋아. 

He isn't taking a salary himself right now.

그는 지금 월급을 가져가지 않고 있어. 

Every day and every minute, that crosses my mind.

매일, 매 순간 생각을 떠올려. 

I don't know what else I can do.

그밖에 내가 무얼 할 수 있을지 모르겠어.

That was the greatest thing I heard.

그것은 내가 들은 말 중에서 가장 대단한 말이었어.
